1 pound ground mild sausage

1 large onion, chopped

1 pound sharp Cheddar cheese, shredded, divided

2 large tart apples - peeled, cored, and chopped

1 cup cooked rice

2 eggs, divided

1 teaspoon salt

½ teaspoon ground black pepper

2 puff pastry crusts, defrosted

Directions

Preheat the oven to 400 degrees F (200 degrees C). Line 2 baking sheets with parchment paper.

Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet for about 3 minutes. Add onion and continue cooking until sausage is browned and crumbly, about 3 minutes more. Drain and discard grease.
